- 1 English cucumber
- carrot, onion, scallions (optional)
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 2 tsp sesame oil
- 1 - 3 tsp Korean chili flakes / gochugaru (고추가루)
- 1 tsp toasted sesame seeds (garnish)
Peel and cut the cucumber into thick, half moon slices. Add grated carrot, thinly sliced onion and chopped scallions (optional). Mix garlic, soy sauce, sesame oil and gochugaru to taste. Toss vegetables in dressing and sprinkle sesame seeds on top.
