Ermine Frosting (Flour Buttercream)

INGREDIENTS :

  • 3/4 – 1 cup (2 – 2.5 dl) sugar
  • 4 tbsp all-purpose flour
  • 1 cup (2.5 dl) milk
  • 2 sticks (200 g) soft butter
  • 1 tsp vanilla extract (or 2 tsp vanilla sugar)
  • gel food coloring (optional)

INSTRUCTIONS :

  • Whisk together flour, sugar and milk, then heat while whisking until thickened.
  • Refrigerate the thickened pudding until cool.
  • Beat the butter until light and fluffy, then add pudding a spoonful at a time until all has been incorporated.
  • Mix in vanilla and gel food coloring (optional), then use immediately.
  • Keep frosted cakes refrigerated but serve them at room temperature.

NOTES :

This makes about 3 cups (8 dl) frosting. Enough for a 8 – 9 inch (20 – 23 cm) three layer cake or 12 cupcakes.
