Adobada (Marinated Pork)

INGREDIENTS :

  • 1 1/2 lb (700 g) thinly sliced pork (butt roast or similar)
  • 4 tbsp citrus or pineapple juice
  • 4 tbsp chopped cilantro (optional, but highly recommended)
  • 4 tbsp distilled white vinegar (5 %)
  • 2 tbsp olive oil
  • 1 red chili (I use rehydrated, deseeded guajillo)
  • 1/2 onion
  • 3 – 4 garlic cloves
  • 1/2 bay leaf (optional)
  • 1 tbsp fresh or dried oregano
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp ground cloves
  • 1/4 tsp cinnamon

INSTRUCTIONS :

  • Blend all ingredients (except the pork) using a food processor or hand blender.
  • Mix with the meat and refrigerate for 2 – 24 hours.
  • Grill until the pork is fully cooked.

Slice and serve.
