Havrebollar / Oatballs (Lincals Style)

INGREDIENTS :

  • 1 1/2 cup (3.5 dl) rolled oats
  • 1/4 cup (0.5 dl) desiccated / shredded coconut
  • 1 tsp cocoa powder
  • 1 stick (100 g) soft butter
  • 1/2 cup (1 dl) sugar
  • 1/4 cup (0.5 dl) heavy cream, half-and-half or milk
  • 1 tsp vanilla sugar, or 1/2 tsp vanilla extract
  • 1 tbsp cold coffee (optional)

  • 1/2 cup (1 dl) desiccated / shredded coconut, for coating

INSTRUCTIONS :

  • Blend oats and coconut into a coarse powder and mix with cocoa.
  • In a separate bowl, beat butter and sugar until creamy. Add the oats mixture, cream, vanilla and coffee, then beat for 5 minutes more.
  • Refrigerate for 1 hour.
  • Shape into bite-sized balls and dip in shredded coconut.
  • Store in an airtight container in the refrigerator.

NOTES :

Tastes even better the next day.
