Light & Moist Cornbread

INGREDIENTS :

  • 1 stick (100 g) butter
  • 1 cup (2.5 dl) sugar
  • 2 eggs
  • 2 1/2 cups (6 dl) milk or buttermilk
  • 2 cups (5 dl) cornmeal
  • 2 cups (5 dl) all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt

INSTRUCTIONS :

  • Set the oven to 350°F (175°C).
  • Melt the butter and let it cool slightly.
  • Stir in sugar, then eggs and milk. Finally add cornmeal, flour and baking powder. Stir to combine (a few small lumps are okay).
  • Transfer to a greased 13 x 9 inch (33 x 23 cm) baking pan and bake until golden brown (at least 45 minutes). A cake tester/toothpick should come out dry.
  • Serve as is, or with soft butter and honey.

NOTES :

Caramel – Replace half the sugar with brown sugar and sprinkle more brown sugar on top before baking.
Maple Bacon – Add cooked bacon bits to the batter and drizzle maple syrup on top when out of the oven.
Tex-Mex – Add diced jalapeño to the batter and sprinkle grated cheddar cheese on top.
Rustic – Mix corn kernels (a small can/about one cup) into the batter.
