Simple Custard Sauce (Crème Anglaise)

INGREDIENTS :

  • 1/4 cup (0.5 dl) sugar
  • 1 tbsp potato or corn starch
  • 1 cup (2.5 dl) milk
  • 1 egg
  • 1 tsp vanilla extract (or 1 tbsp vanilla sugar)
  • 1 cup (2.5 dl) heavy cream

INSTRUCTIONS :

  • Whisk sugar and starch, then whisk in milk and finally egg and vanilla.
  • Heat carefully while whisking until it begins to thicken. Remove from heat and continue whisking until it has stopped cooking.
  • Refrigerate for at least 30 minutes.
  • Whip cream until soft peaks form and fold into the chilled custard.
