Spicy Cucumber Salad (오이무침)

INGREDIENTS :

  • 1 English cucumber
  • carrot, onion, scallions (optional)
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 – 3 tsp Korean chili flakes / gochugaru (고추가루)
  • 1 tsp toasted sesame seeds (garnish)

INSTRUCTIONS :

  • Peel and cut the cucumber into thick, half moon slices.
  • Add grated carrot, thinly sliced onion and chopped scallions (optional).
  • Mix garlic, soy sauce, sesame oil and gochugaru to taste.
  • Toss vegetables in dressing and sprinkle sesame seeds on top.

Peel and cut all the vegetables.

Toss with dressing..
