- 1 stick (100 g) butter
- 1 cup (2.5 dl) sugar
- 1/2 cup (1 dl) all-purpose flour
- 1 tsp baking powder
- 2 lemons, juice and zest
- 3 eggs, separated
- 1/2 cup (1 dl) milk
- powdered sugar, for dusting
Set the oven to 350°F (175°C) and grease a 5 – 6 cup baking dish or half a dozen ramekins. In a saucepan, melt the butter and let it cool slightly. Whisk in sugar, flour, baking powder, lemon, egg yolks and finally milk. In a clean, dry bowl, beat the egg whites until soft peaks form. Fold gradually into the remaining mixture (stirring slowly with a balloon whisk works especially well). Pour the batter into the prepared dish/dishes and place them in a baking pan. Fill the pan halfway up with hot water and bake until lightly golden, about 25 – 30 minutes. Dust with powdered sugar and serve with or without vanilla ice cream or softly whipped cream.
