Almond Paste/Marzipan

  • 1.5 cups (3.5 dl) finely ground almond flour, preferably from blanched almonds
  • 1.5 cups (3.5 dl) powdered sugar
  • 1 egg white (or 2 tbsp oil or corn syrup to bind)
  • a few drops almond extract, to taste
  • a few drops rose water, to taste (optional)


  • Mix by hand, with a stand mixer or blender.
  • Transfer to a surface dusted with powdered sugar and shape as needed.
  • Wrap in plastic and store in the refrigerator.


I use orange blossom water from Tunisia for my marzipan. Tastes wonderful!
