American Pancakes

INGREDIENTS :

  • 2 cups (5 dl) all-purpose flour
  • 1/2 – 3/4 cup (1 – 2 dl) sugar, to taste
  • 2 tsp baking powder
  • 1 1/2 cup (3.5 dl) milk or buttermilk (filmjölk)
  • 2 eggs
  • 1/2 stick (50 g) butter, melted
  • 1/2 tsp vanilla extract (or 1 tsp vanilla sugar)

INSTRUCTIONS :

  • Mix dry ingredients, then add milk and whisk until smooth.
  • Add the eggs, then finally melted butter and vanilla. You can also fold in berries, chocolate chips or nuts in the batter.
  • Cook on low-medium heat until golden brown on both sides (it is time to flip when they have risen and bubbles are visible on top). When you add berries, use low heat and longer cooking time so they cook all the way through.
  • Serve with butter, syrup and fresh berries or jam.

NOTES :

My favorite is my daughter’s version with raspberries and white chocolate chips in the batter. They are so sweet and moist that you do not have to add anything when serving them.
