Arroz Rojo (Mexican Red Rice)

INGREDIENTS :

  • 1 cup (2.5 dl) long grain rice
  • 1 tbsp olive oil
  • 2 cups (5 dl) chicken broth or water with a chicken bouillon cube
  • 1/2 cup (1 dl) tomato sauce / purée
  • 1 garlic clove
  • 1 tsp salt
  • 1 tsp ground cumin

INSTRUCTIONS :

  • Sauté rice in oil until lightly browned (optional).
  • Always keep the lid on when cooking rice.
  • Add the remaining ingredients and bring to a boil.
  • Stir, then allow to simmer (under lid) over low heat until most of the liquid has been absorbed (about 20 minutes). You can stir occasionally to prevent sticking to the bottom.
  • Remove from heat and allow to swell under lid until done.

NOTES :

I usually skip the sautéing and just start with everything in the pot. Still tastes great!

Mix and simmer (under lid) until liquid is absorbed.
