Drömmar (Swedish Dream Cookies)

INGREDIENTS :

  • 1/2 stick (50 g) soft butter
  • 2/3 cup (1.5 dl) sugar
  • 1/4 cup (0.5 dl) neutral oil (I use Crisco pure canola oil)
  • 1 tsp vanilla sugar, or 1/2 tsp vanilla extract
  • 3/4 cup (2 dl) all-purpose flour
  • 1/2 tsp ammonium bicarbonate / baker's ammonia (hjorthornssalt)

INSTRUCTIONS :

  • Set the oven to 300°F (150°C).
  • Mix butter and sugar by hand or mixer, then gradually add the oil. Finally mix in flour and ammonium bicarbonate.
  • Roll into balls and place on a lined baking sheet. Flatten them a little with your fingers, then refrigerate for 15 minutes.
  • Bake for 20 minutes and allow to cool on the baking sheet.

NOTES :

Baker’s ammonia can be found online or in select European or international markets. Using regular baking powder works, but they will not turn out as crumbly.
