Kolasnittar (Swedish Caramel Cookie Cuts)

INGREDIENTS :

  • 1 stick (100 g) soft butter
  • 1/2 cup (1 dl) brown or white sugar
  • 1 tbsp dark corn syrup
  • 1 tbsp vanilla sugar, or 1 tsp vanilla extract
  • 3/4 cup (2 dl) all-purpose flour
  • 1 tsp baking powder

INSTRUCTIONS :

  • Set the oven to 350°F (175°C).
  • Mix all ingredients by hand or with a mixer until combined.
  • Roll the dough into finger-thick logs, place them on a lined baking sheet and flatten them a little on top.
  • Bake until the edges begin to brown, about 15 minutes.
  • Cut diagonally while still soft and warm, then allow to cool on the baking sheet.

NOTES :

These cookies taste delicious as they are, but if you feel adventurous try adding your favorite spice, for example ginger, cinnamon or cardamom.
