General Tso’s Chicken Sauce

  • 1/2 cup (1 dl) water
  • 1/4 cup (0.5 dl) soy sauce
  • 1/4 cup (0.5 dl) sugar (use brown sugar if you prefer it less sweet)
  • 1 tbsp rice vinegar, or white wine vinegar
  • 1 1/2 tbsp potato or corn starch
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, minced
  • 1 or more tsp chili-garlic sauce, sriracha or sambal oelek
  • dried red chili flakes or pods (optional)


  • In a saucepan, whisk to combine all ingredients then simmer until thickened.
  • Add more water if needed and adjust flavor to taste with sugar, vinegar, soy and chili.
  • Toss to coat fried pieces of dark chicken meat / boneless thighs (my recipe here).
  • Serve with white rice and steamed broccoli.


A quicker alternative is to coat the cubed chicken in flour or breadcrumbs then pan-fry them in oil before tossing them in the sauce. Or use store-bought fried chicken.

Simmer until thickened.

Use to coat fried chicken.
