Hasselback Potatoes

  • 10-12 small or medium potatoes
  • 4 tbsp butter
  • 1 tsp salt
  • 4 tbsp bread crumbs


  • Set the oven to 400°F (200°C).
  • Peel the potatoes and slice them thinly, but keep the bottom intact so that they still hold together (place the potato in a spoon or between two chopsticks to stop the knife from cutting all the way through).
  • Transfer to a lined baking sheet and place thin slices of butter on top of each potato, or melt the butter and brush it on.
  • Sprinkle with salt and bread crumbs.
  • Bake until soft and golden brown, about 45 minutes.

Slice thinly, but not all the way through.

Top with butter, salt and breadcrumbs, then bake at 400°F (200°C).
