- 2 lb (1 kg) thick, country -style pork ribs, preferably bone-in
- 1 onion, quartered
- 5 cups (12 dl) water
- 3 – 4 tsp salt
- 10 white pepper corns
- 1 bay leaf
Glaze- 1/2 cup (1 dl) neutral oil
- 1/4 cup (0.5 dl) brown sugar
- 1/4 cup (0.5 dl) honey
- 1/4 cup (0.5 dl) soy sauce
- 1/4 cup (0.5 dl) ketchup or tomato-based chili sauce
- 1 tbsp onion powder
- 2 tsp dried ginger
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp white or black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp ground cloves
Simmer the ribs in salted water, with onion, pepper corns and bay leaf for 1 hour. Meanwhile, mix the ingredients for the glaze. Coat the ribs with 2/3 of the glaze and refrigerate for 2 – 24 hours. Grill or bake the ribs at 400°F (200°C) until nicely browned, about 10 – 15 minutes on each side. Brush with more glaze and serve.
