Juicy Country-Style Ribs

INGREDIENTS :

  • 2 lb (1 kg) thick, country -style pork ribs, preferably bone-in
  • 1 onion, quartered
  • 5 cups (12 dl) water
  • 3 – 4 tsp salt
  • 10 white pepper corns
  • 1 bay leaf

Glaze

  • 1/2 cup (1 dl) neutral oil
  • 1/4 cup (0.5 dl) brown sugar
  • 1/4 cup (0.5 dl) honey
  • 1/4 cup (0.5 dl) soy sauce
  • 1/4 cup (0.5 dl) ketchup or tomato-based chili sauce
  • 1 tbsp onion powder
  • 2 tsp dried ginger
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp white or black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground cloves

INSTRUCTIONS :

  • Simmer the ribs in salted water, with onion, pepper corns and bay leaf for 1 hour.
  • Meanwhile, mix the ingredients for the glaze.
  • Coat the ribs with 2/3 of the glaze and refrigerate for 2 – 24 hours.
  • Grill or bake the ribs at 400°F (200°C) until nicely browned, about 10 – 15 minutes on each side.
  • Brush with more glaze and serve.
