Shortbread Cookies

  • 2 cups (5 dl) all-purpose flour
  • 1/2 cup (1 dl) sugar
  • 2 sticks (225 g) soft butter


  • Rub butter and dry ingredients together until a smooth dough forms.
  • Shape into cookies or press into tart/tartlette pans.

Shaping suggestions

  • Shape the dough into a log, refrigerate for 30 minutes, then cut into slices.
  • Roll into balls and flatten with a fork or cookie stamp (covered with plastic wrap to prevent the dough from sticking).
  • Soften the dough with some milk and pipe onto lined baking sheets.


  • Brush with egg wash and sprinkle with pearl sugar (optional).
  • Bake at 375°F (190°C) just until the edges begins to color, about 10-12 minutes.


Add 3-4 tbsp of Dutch process cocoa powder for chocolate flavored shortbread.
