Ground Beef for Meatballs & Patties

INGREDIENTS :

  • 1 tbsp bread crumbs
  • 1/2 tbsp potato or corn starch
  • 4 tbsp heavy cream
  • 1 lb (0.5 kg) ground beef, preferably mixed with ground pork
  • 4 tbsp minced onion
  • 1/2 tsp salt
  • pinch of black or white pepper
  • 1/2 tsp anchovy paste (optional)
  • 1 egg (optional)

INSTRUCTIONS :

  • Mix bread crumbs, starch and cream, then let it sit for a few minutes.
  • Meanwhile, mince or grate the onion.
  • Combine all ingredients in a bowl and shape into balls or patties.
  • Fry them in butter or butter-oil blend until the crust is nicely browned and the inside a little pink.
  • Taste and sprinkle with salt, if needed.
