Ostkaka (Swedish Cheesecake)

INGREDIENTS :

  • 2 cups (5 dl) fresh cheese (home made, ricotta or low sodium cottage cheese)
  • 3 tbsp all-purpose flour
  • 4 tbsp sugar
  • 1 1/4 cups (3 dl) heavy whipping cream
  • 4 large eggs
  • 1/2 cup (1 dl) chopped almonds
  • 1 tsp almond extract

INSTRUCTIONS :

  • Set the oven to 350°F (175°C).
  • Whisk flour and sugar, then gradually add the cream, followed by eggs and almond extract.
  • Stir in cheese and chopped almonds, then pour into a lightly greased pan.
  • Bake until lightly golden brown, about 45 minutes.
  • Serve lukewarm with whipped cream and jam.

    I had this hand written recipe from cousin’s Mormor in early 80’s but mice destroyed it in a storage box. So nice you have written it here!
