- 1 stick (100 g) butter
- 2 cups (5 dl) all-purpose flour
- 1 tbsp sugar (2 tbsp if using sparkling water)
- 1 tsp salt
- 1 tsp baking powder
- 1 1/4 cup (3 dl) milk
- 1/2 cup (1 dl) heavy cream
- 1/2 cup (1 dl) clear, mild soda (like Sprite/7UP) or sparkling water
Turn on your waffle iron (I set mine to the highest setting but yours may be different). Melt the butter and let it cool a little. Sift the dry ingredients into a bowl. Whisk in milk, cream and melted butter, then finish by adding soda/sparkling water. Cook the waffles until golden brown and place them separately on a cooling rack. Serve immediately with whipped cream and fresh fruit or jam.
You can keep the waffles crisp by storing them in the oven at 175°F (80°C).
In fact, they turn into tasty crackers/wafers when left in the oven for too long, which we discovered by mistake 🙂 .
They can also be used as a base for certain appetizers instead of bread or toast, but then skip the sugar and use sparkling water for more savory waffles.
