Swedish Crisp Waffles (Frasvåfflor)

INGREDIENTS :

  • 1 stick (100 g) butter
  • 2 cups (5 dl) all-purpose flour
  • 1 tbsp sugar (2 tbsp if using sparkling water)
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 1/4 cup (3 dl) milk
  • 1/2 cup (1 dl) heavy cream
  • 1/2 cup (1 dl) clear, mild soda (like Sprite/7UP) or sparkling water

INSTRUCTIONS :

  • Turn on your waffle iron (I set mine to the highest setting but yours may be different).
  • Melt the butter and let it cool a little.
  • Sift the dry ingredients into a bowl.
  • Whisk in milk, cream and melted butter, then finish by adding soda/sparkling water.
  • Cook the waffles until golden brown and place them separately on a cooling rack.
  • Serve immediately with whipped cream and fresh fruit or jam.

NOTES :

You can keep the waffles crisp by storing them in the oven at 175°F (80°C).
In fact, they turn into tasty crackers/wafers when left in the oven for too long, which we discovered by mistake 🙂 .
They can also be used as a base for certain appetizers instead of bread or toast, but then skip the sugar and use sparkling water for more savory waffles.
