Happy Easter !

Thanks to a Russian friend I started making Paskha more than ten years ago. What I didn’t know was that it’s supposed to be served with Kulich, a sweet bread not unlike my beloved Panettone.

To make your own Paskha, you need fresh cheese. Some use cottage cheese, others ricotta, but I want to encourage you to make your own. It is surprisingly fun to make cheese, and fascinating to watch the milk curdle and transform into soft, white curds.

I will be giving you more recipes in the future that uses home made cheese, so stay tuned!
