Hasselback Potatoes

The name suggests that the dish originates from Restaurant Hasselbacken in Stockholm, but similar recipes can be found in old Swedish cookbooks. This is my husbands favorite potato dish and it is great with practically anything. Even by itself!

Skagenröra (Swedish Shrimp Salad)

This is the most common mayo-based salad in Sweden, found in sandwiches sold at gas stations as well as on appetizer menus of exclusive restaurants. Tasty, fresh and very easy to make!

Lemon Meringue Pie

This is a classic dessert and it is easy to understand why: deliciously sweet and sour lemon curd inside a flaky pie crust topped with soft, airy meringue. Yum!

Lemon Delicious Pudding

This self-saucing pudding was introduced to me when I was an exchange student in Australia. I prefer baking it in a larger dish, which results in more sauce at the bottom, then serve it with vanilla ice cream. For formal occasions I use individual ramekins instead.

Mexican Fiesta

In Southern California we are spoiled with great Mexican food, so lets start with the basics in a delicious taco buffet.

Corn Tortillas

Making your own tortillas tastes so much better than the plastic wrapped you find in the store. At first it may feel a little tricky to transfer the flattened dough to the griddle but it is quite easy once you get a hang of it.

Adobada (Marinated Pork)

This is our absolute favorite when it comes to Mexican fast food! Great in tacos, burritos and on top of fries or rice. Flavorful without being spicy, I am confident it will become your favorite, too!
